Oatmeal Banana Apple Muffins

There is no better breakfast on the go than a fresh muffin which blends hints of cinnamon and vanilla with the sweet taste of banana.

Makes 12 medium muffins

Prep. time: 15 minutes

Cook time: 25-30 minutes

Ingredients: 

  • 2 cups quick cooking oats
  • 1 cup flour
  • 1/2 cup Cheerios (crushed in a plastic bag)
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 4 Tbsp. cinnamon
  • 1 tsp. cloves
  • 1 cup vanilla yogurt
  • 1 cup applesauce
  • 3 ripe bananas 
  • 1/8 cup diced apples
  • 2 eggs
  • 1/4 cup butter, softened
  • 1/8 cup honey
  • Additional oats for topping
  1. Preheat the oven to 400°F. Combine dry ingredients in a large bowl.
  2. Add wet ingredients. Stir until thoroughly combined.
  3. Spoon into greased muffin pan.  Sprinkle oats over the top of each cup.
  4. Bake for 25-30 minutes until golden brown.
